***RFI Response*** Prepare and cook to order a variety of foods with short preparation time in a low country dining restaurant. Prepare quick and simple recipes such she-crab soup and BBQ shrimp and grits, fried green tomatoes, and crispy fried chicken. Perform food preparation tasks such as simple assembly of prepped and partially cooked ingredients to create sandwiches, burgers, salads and soups finishing them quickly on the grill or in the oven when ordered. Ensure food is stored and cooked at correct temperature by regulating fast ovens, broilers, grills, and roasters. Use standard commercial kitchen equipment, relying heavily on deep fryers for the crispy chicken wings and house chips. Ensure freshness of foods and ingredients by checking for quality, keeping track of old and new items and rotating stock. Clean food preparation equipment within the kitchen such as ovens, grills, and deep fryers, using soap, degreaser, and scrubbing pads. Clean kitchen work areas such as kitchen counters and tables using surface cleaners, cleaning brushes and sanitizers.
