The Line Cook is responsible for preparing and cooking menu items according to established recipes and standards, including washing, peeling, cutting, and seeding fruits and vegetables, and preparing, roasting, and steaming meats, fish, vegetables, and other foods. The Line Cook turns or stirs foods to ensure even cooking, observes and tests foods to determine if they are cooked sufficiently, and seasons and cooks foods according to recipes or personal judgment and experience. They ensure food safety and sanitation practices are followed at all times, inspect and clean food preparation areas such as cooking equipment, work surfaces, and serving areas, and ensure food is stored and cooked at the correct temperature by regulating ovens, broilers, grills, and roasters. The Line Cook ensures freshness of food and ingredients by checking for quality, keeping track of old and new items, and rotating stock, while collaborating with the kitchen team to ensure timely meal preparation and service. Additional responsibilities include maintaining cleanliness and organization of the kitchen workspace, assisting in inventory management and food storage practices, operating kitchen equipment safely and efficiently, participating in menu planning and development as needed, supporting dietary needs by preparing specialized meals when required, and substituting for or assisting other cooks during emergencies or rush periods.
