***RFI Response*** Specific Refreshments to be prepared and served to patrons and their method of preparation are as follows: Nachos with Cheese /Jalapenos: Nacho Chips, Nacho Chip Cheese, Nacho Sliced Jalapenos, Nacho Trays are taken from storage and placed into the preparation area. A #10 can of Nacho Cheese Sause would be opened with a commercial grade can-opener and scooped into the top of a standard double boiler, to heat and maintain the cheese sauce at the proper temperature and consistency. With gloved hands, workers would scoop Chips into the Nacho Tray, scoop out hot cheese sauce with a ladle, sprinkle Sliced Jalapenos on top with gloved hands and hand the food product to client. Fountain Soda. For a fountain drink, the worker would take the proper size cup in their hand, use an ice scoop to scoop ice into the cup (unless the patron ordered no ice), place the cup under the nozzle, press the cup against the lever and fill the cup. Take a lid from the lid supply and secure this on the top of the cup. Lemonade: On a cutting board, the lemons would be cut in half. See through plastic cups and lids would be brought from storage. A food service quality bin of ice with ice scoop would be placed into the work area. Workers serving lemonade would stand at the front counter, communicating with the customer. After taking the order, would scoop ice into a cup, pick up (with gloved hand), and squeeze Lemon Juice into the cup, using a Squeezer. Pre-mixed sugar water would be poured into the cup, and then the product would be served with lid and straw to the patron. Tables, chairs, decorations (which may include table cloths, napkin holders, signage, displays) are carried from one venue to another in the trailer. They would be moved by hand from the trailer and set up in the proper location, by hand. Items are not heavy (25 pounds or less) and can be moved by hand and set up without any tools. The dining area would be in close proximity to the food concessions stand. ***Original F.a.2*** Perform variety of attending duties at mobile food concession. Arrange tables and decorations according to instructions. Communicate with customers regarding orders. Accept payment from customers. Serve food, beverages or desserts to customers. Prepare daily food items and cook simple foods and beverages using proper safety precautions and safety measures. Clean & organize eating, service, and kitchen areas. Perform cleaning duties to keep equipment and facilities sanatory.
