Prepare Japanese food with Mexican flavor using traditional Japanese technique with spices and ingredients of Mexico. Cook and prepare a variety of sushi rolls, sashimi and nigiri plates, chicken, fish, sushi tacos with marinated pork (Mexican Pastor) egg rolls, tempura shrimp and vegetables. Handle and portion seafood, including slicing, filleting and cutting fish for sushi and sashimi. Ensure freshness of food, ingredients, and raw materials by checking the quality, keeping track of old and new items, and rotating stock. Wash and grade crawfish, shuck oysters prior cooking. Wash, peel, cut and seed fruits and vegetables to prepare for consumption. Bake, roast, grill, broil, and steam meats, marinate pork (Mexican pastor) fish, vegetables, and other foods. Cook at correct temperature by regulating temperature of ovens, broilers, grills, and roasters. Weight, measure, and mix ingredients according to recipes of Japamex signature, using various kitchen utensils, and equipment. Collaborate with other kitchen staff to ensure efficient operations during service. Follow all Food Safety and sanitations protocols.
