Ensure that all food, and ingredients, are stored, and prepared, at proper temperatures by monitoring, and regulating, the temperatures of refrigeration units, as well as, ovens, steamers, broilers, grills, roasters and fryolators. This includes the proper, and timely, rotation of all perishable product(s) based on the date any given product was received. Work closely with all staff members in regards to the importance of properly maintaining food preparation areas, such as equipment, work surfaces, and serving areas to preserve food integrity in a sanitary working environment. Work in collaboration with all other line workers to perform all aspects of the food preparation process, which involve, but are not limited to, sauces, seasonings, proteins and other various food items. Be sure to follow all recipes as they relate to preparation, seasoning, and cooking. Ensure all cooked foods are at the proper/safe temperature with the use of food thermometers. Properly portion plates in a sanitary/timely manner while maintaining open communication with the waitstaff in regards to when orders have been completed and are ready to be served to our guests. As an individual contributor to the line, be available to help other line cooks when necessary, and, communicate with other line cooks when personal assistance is needed. Be an active participant in all kitchen/dining cleaning activities, as well as, end-of-night closing protocols, such as, properly storing all food/ingredients, as well as, ensuring all equipment has been cleaned and properly shutdown for the remainder of the evening.
