• Operate mogul machine verifying the controls are set up to produce according to product specifications. • Set up machine controls to ensure candy is deposited under parameters and specifications established. • Adjust machine setup before and during production run by checking deposit temperature, starch temperature and moisture. • Monitor food cooking machines and adjust the controls for devices such as boilers, ovens, and cookers. • Ensure product meet specifications in color, flavor, size and form. • Request product packaging material and labels based on work order specification. • Adjust control panel to ensure weight, machine speed, unmolding, deposit, figure printing and temperature are meeting product quality requirements. • Adjust deposit pump controls to ensure proper manual and automatic functioning. • Remove, clean and place nozzle plaques and forms. • Check and lubricate plaques. • Adjust deposit hopper. • Manage vortex system following recipe. • Manage starch supply in Mogul platter and in the system. • Keep in constant communication with kitchen operator and supervisor. • Follow cleaning procedures for depositing hoppers, sensors, former, and pump space. • Complete production and quality reports. • Document out of specification product following procedure.
