Check the quality of raw and cooked foods to ensure that standards are met. Monitor staff to clean kitchen and workstations daily before leaving the restaurant. Check that all equipment and utensils are properly cleaned and sanitized daily. Supervise and instruct other cooks and workers to properly prepare and cook Mexican cuisine for daily lunches and dinners. Meet with Owner to discuss desired menu for special events. Inspect dishes before service to patrons to ensure each dish adheres to Mexican style of preparation and presentation. Determine how food should be presented and prepared based on in-depth familiarity with Mexican cuisine, including but not limited to: difference types of Mexican cookware; various Mexican spices; various Mexican sauces; and different cuisine from various regions of Mexico, especially seafood-based cuisine. Meet with restaurant management and dining room manager at the end of each day regarding operations and concerns and to plan for the next day, including special events. Maintain and update inventory checklist daily. Arrange for purchases related to food, supplies, and equipment and coordinate relevant repairs to ensure efficient operations.
