***RFI response*** Setting up of the mobile food concessions stand could include any of the following duties: • Clean & Organize cooking area o Pick up, clean and place in the proper area any cooking utensils that may have moved or fallen during transit. o Prepare buckets of cleaning solutions that are needed to sanitize the work area. • Clean & Organize serving area. o Open bags of ice, dump ice into bin. o Stock the cup dispenser with proper size cups, lids and straws. o Stock the serving area with proper plates, bowls and trays to serve food items to the public. • Clean & Organize dining area. o Arrange tables o Place any decorations or signage as directed. o Place napkins into napkin holders, place napkin holders on tables o Place plastic cutlery into dispenser. o Place self-condiments and spices. o Place trash bins in appropriate areas and place trash bin liners into the trash bins. Tearing down of the mobile food concessions stand would be the reverse of setting up, collecting all of the items and storing them for travel to the next location. No tools would be needed, typically all the duties would be performed manually. ***Original*** Perform variety of attending duties at mobile food concession, such as setting up, tearing down, and operating mobile food concessions by taking orders and serving food and beverages. Details of tasks that may be involved in this position: Taking orders and serving food and beverages, preparing food and beverages, may take payment, serving customers at the counter or steam table, and may maintain cleanliness of the dining area. May communicate with customers regarding orders; scrub counters, steam tables, and other equipment and clean fountain equipment; perform cleaning duties, such as sweeping, mopping and washing serving devices, to keep equipment and facilities sanitary; serve food, beverages, or desserts to customers attending fair or festival; prepare daily food items, and prepare simple foods and beverages and other fair foods; wrap menu items for serving; set up dining areas; and prepare and serve beverages and deserts. Detailed menu-corn dogs, chicken, funnel cakes, lemonade. The worker would pour prepackaged frozen foods into a fryer (similar to what someone would see at any other fast food establishment), when the timer goes off the basket raises itself automatically to drip the hot grease back into the fryer, then the worker when the second buzzer sounds, would pick up the basket with gloved hand, dump onto a tray, sprinkle with salt or other seasonings, and place into the appropriate container (medium, large or family sized). Continual cleaning of the work area during the shift and at the end of the day. Putting supplies into refrigeration – or discarding, are part of the duties. Fountain and bottled drinks. These workers would NOT be serving any alcoholic beverages. For a fountain drink, the worker would take the proper size cup in their hand, use and ice scoop to scoop ice into the cup, place the cup under the nozzle, and fill the cup. Secure lid on the top of the cup. Worker would need to restock the cups, lids and ice from the appropriate storage area. The worker would need restock the proper flavor of prepackaged syrup, disconnect the empty syrup container, connect the full syrup container, and then discard the empty container. At the end or the day, carefully clean the fountain machine. Bottled drinks, the worker would simply pull a bottle of the requested flavor/brand of bottled drink from the cooler. Provide the bottle with or without a cup/ice/lid as per the customers request to the server or directly to the customer, depending upon what position (front counter taking orders, etc., or back of the house preparing the orders) is filling that shift.
