Perform a variety of attending duties at traveling carnival food concession, such as setting up, tearing down, and operating mobile food concessions by taking orders and serving food and beverages. Details of tasks that may be involved in this position: May communicate with customers regarding orders; scrub counters, steam tables, and other equipment and clean fountain equipment, accept payment from customers and make change as necessary; perform cleaning duties, such as sweeping, mopping and washing serving devices, to keep equipment and facilities sanitary; serve food, beverages, or desserts to customers attending fair or festival; prepare daily food items, and cook simple foods and beverage; wrap menu items for serving; set up dining areas; and prepare and serve cold drinks or desserts, using drink-dispensing machines. TexMex Trailer, the tasks and equipment: Maintain proper heating temperature on the Grill by turning the section controls up or down. Meat products come from the distributor frozen, pre-marinated, seasoned and cooked. Move the frozen supply from freezer to refrigerator. Open the bag with a pair of scissors, and dump product onto the hottest section of the grill. Add spices & flavorings onto the appropriate meat items in the appropriate amount. Use a food service flat spatula to turn and move the meat product around on the grill until fully cooked. Use the flat spatula to move the meat items to an appropriate spot in the low heat section of the grill, pending the items being moved to the production line of chafing dishes. Vegetables: Such as onions, green peppers, jalapeno peppers would have been prepared (peeled, sliced, chopped and placed in containers in the refrigerator by workers prior to the cooking process. Vegetables would be placed into the medium heat area of the grill. Using a flat spatula, the vegetables would be stirred, turned on the grill until they become cooked/charred. The vegetables would be moved to appropriate spots in the low heat section of the grill. Tortillas are delivered by wholesale distributors in plastic bags, which are kept in a refrigerated area. The worker will open the bag using a pair of food service scissors, and place the tortillas on an appropriate space on the low heat section of the grill. The worker would either use tongs or gloved hands. The flour tortillas would be placed in a dry section of the low heat section of the grill. The corn tortillas would be dipped in some of the grease from the meat items hot heat section of the grill, before being placed on to the low heat section of the grill. The tortillas would be flipped with a flat spatula until they are ready. The tortillas would be placed into the appropriate tortilla warmer. A worker on the production line would prepare a quesadilla, using the appropriate ingredients for the specific order, and return the quesadillas to the tortilla warmer. The employer would position the food concessions trailer in the assigned location at the event. During transit, metal awnings cover the glass windows. The worker would unlatch the locks, using their hands. The gas struts would raise the awnings to the correct height automatically. As items would shift during transit, the worker would carefully open the door, observe if everything was in the correct position, and if not, slide whatever was out of passion back into the correct location. Front counter, cash register, counter cloth/banner, trash cans, condiment, cutlery and napkin kiosk(s) would be unloaded by hand and placed into the correct locations. Each item is designed for travel and easy setup, with nothing weighing more than about 20 pounds.
