*** Condensed Original F.a.2 and RFI Response – Combined *** Perform variety of attending duties at traveling carnival food concession, such as setting up, tearing down, and operating mobile food concessions by taking orders and serving food and beverages. Details of tasks that may be involved in this position: May communicate with customers regarding orders; scrub counters, steam tables, and other equipment and clean fountain equipment; accept payment from customers and make change as necessary; perform cleaning duties, such as sweeping, mopping and washing serving devices, to keep equipment and facilities sanitary; serve food, beverages, or desserts to customers attending fair or festival; prepare daily food items, and cook simple foods and beverages; wrap menu items for serving; set up dining areas; and prepare and serve cold drinks or desserts, using drink-dispensing machines. This employer has a variety of food items that they provide (not all at a single event); typical preparation and equipment used are as follows: Gyros. Stand in front of line of hot & cold chafing dishes. Meat items would have been cooked in advance by the supervisor of the stand and out by the supervisor into specific sized pieces and placed into a hot chafing dish. Note that the preparation of the meat would NOT be handled by these workers. Toppings would have been cut into small cubes using a knife and chopping block to be placed into cold chafing dishes. Tzatziki Sauce is purchased in bulk from wholesale food suppliers and comes in large glass bottles. The workers performing this job would take a bottle from storage, open it up (using their hands) and pour this into a cold chafing dish. The worker might use a common plastic spatula to scrape Tzatziki from the bottle. If there is a Tzatziki remaining in the bottle it would be placed into a refrigerator. The pita bread comes prepackaged. The worker would rip the bag open and place the Pita Bread into a hot chafing dish. The worker would take from the supply area a box or boxes of toothpicks, and place into a chaffing dish that is either heated or cooled. Salad Mix comes prepackaged. Bags would be removed from the cooler, opened and poured into a cold chafing dish. When an order comes in -either for a gyro, salad, gyro bowl – the worker would simply assemble the ingredients that is on this internal buffet line using appropriate equipment (tons, serving ladle, gloved hands), place onto a plate or bowl and hand to the worker who will be serving the customer directly. If you are assigned to preparation of batter for deep-fried Oreos. The worker who is preparing the batter would take a container and following the instructions printed on the bag, would pour the mix plus liquid into the container, and mix as per instructions, typically with a blender. All these items would be cooked in deep fryers. There is no cooking involved in the production of Nachos. Workers serving Nachos would stand at the front counter, communicating with the customer. After taking the order, would scoop chips into a nacho tray press the lever of the cheese machine, and use tongs to sprinkle sliced jalapenos on top. The employer would position the food concessions trailer in the assigned location at the event. During transit, metal awnings cover the glass windows. The worker would unlatch the locks, using their hands. The gas struts would raise the awnings to the correct height automatically. As items would shift during transit, the worker would carefully open the door, observe if everything was in the correct position, and if not, slide whatever was out of passion back into the correct location. Front counter, cash register, counter cloth/banner, trash cans, condiment, cutlery and napkin kiosk(s) would be unloaded by hand and placed into the correct locations. Each item is designed for travel and easy setup, with nothing weighing more than about 20 pounds
