*** RFI Response *** The specific food items being prepared, tasks and preparation equipment that will be used by people working in this position for Mileo Amusements: Soft Serve Specialty Ice Cream: We have one trailer that is branded and serves a variety of flavors of soft serve ice cream. The ice cream that comes out of the machine is thicker than normal soft serve and has a sweet but neutral base flavor. To make the ice cream, the mix is poured into the Spaceman 6210 Soft Serve Ice Cream Machine, it is connected to electricity and water, and we get the ice cream. Once the ice cream is ready. The toppings are in small bins at the front edge of the chilled counter, with scoops we scoop the toppings onto the ice cream. We have a chilled counter and mix the ice-cream using whatever ingredients the customer wants, using a spatula. The spatula is also used to scrape the mixed ice cream off the counter and into a bowl or waffle cone for serving. Bubble Tea: We have a second trailer that is branded and serves a variety of flavors of “Bubble Tea”. This is a tea-based drink from Taiwan, originally called Boba or Pearl Tea. We have several Boba Tea Machines that produce the tea, adds the flavoring, adds the Tapioca Pearls, and then actually seals the lids onto the top of the cup. The machine is connected to water and electricity, supplies poured into the machine when needed, orders keyed into the machine and the cup of tea delivered to the patron. The employer would position the food concessions trailer in the assigned location at the event. During transit, metal awnings cover the glass windows. The worker would unlatch the locks, using their hands. The gas struts would raise the awnings to the correct height automatically. As items would shift during transit, the worker would carefully open the door, observe if everything was in the correct position, and if not, slide whatever was out of passion back into the correct location. Front counter, cash register, counter cloth/banner, trash cans, condiment, cutlery and napkin kiosk(s) would be unloaded by hand and placed into the correct locations. Each item is designed for travel and easy setup, with nothing weighing more than about 20 pounds. *** Original F.a.2 *** Perform variety of attending duties at traveling carnival food concession, such as setting up, tearing down, and operating mobile food concessions by taking orders and serving food and beverages. Details of tasks that may be involved in this position: May communicate with customers regarding orders; scrub counters, steam tables, and other equipment and clean fountain equipment; accept payment from customers and make change as necessary; perform cleaning duties, such as sweeping, mopping and washing serving devices, to keep equipment and facilities sanitary; serve food, beverages, or desserts to customers attending fair or festival; prepare daily food items, and cook simple foods and beverages such as sandwiches, pizza, deep fried Oreos, lemonade or other fair foods; wrap menu items for serving; set up dining areas; and prepare and serve cold drinks, frozen milk drinks, or desserts, using drink-dispensing, milkshake, or frozen-custard machines.
