Job duties require workers to perform a variety of tasks throughout the production line. Graders and sorters of live fish monitor fish as they move along a conveyor belt, selecting and sorting them by size. Larger fish are placed onto the head machine and directed into a designated receptacle, while smaller fish are placed into pans for processing through a manual head saw. Graders and sorters of fillets work at the cold-water vat chiller, where they select individual fillets and place them onto a sizing conveyor belt for further processing. Nugget and fillet inspectors are responsible for ensuring product quality and safety through both visual and hands-on inspections. They examine each nugget and fillet to ensure it is free of bones, bone fragments, skin, or any foreign material. This includes physically handling each piece to identify imperfections, and trimming them as needed to remove any remaining contaminants. Eviscerates are tasked with removing the intestines from the fish by hand, while skinners lift fish from the conveyor belt and carefully remove the skin. Finally, fillet loaders place the cleaned and prepared fish onto designated fish holders, readying them for the next stage of production. There are few typical days and workers may be required to change duties and/or locations often and engage in various general functions. Daily duties may vary depending on crop, weather, and field conditions.
